Separate the eggs and beat whites until stiff but not dry. Set aside. In another bowl, combine egg yolks, buttermilk, flour, baking powder, salt, baking soda, sugar, and butter. Beat until smooth, and then fold in the egg whites. Heat an aebleskiver pan over medium heat and put about 1 teaspoon oil into each depression. Pour about 2 tablespoons of the batter into each cup, and as soon as they get bubbly around the edges, turn quickly using a knitting needle or crochet hook or other such needle-like instrument so as not to puncture the balls. Continue cooking, turning the ball to keep it from burning. Serve with raspberry jam or maple syrup and powdered sugar.
