Apricot-rosemary Chicken

Directions

Soak apricots in very hot water 15 minutes; drain and cut into thin strips. Salt and pepper chicken breast. Place on foil, 12x12 inches. Top with apricots, green onion, rosemary and orange juice. Fold foil around chicken to make loose airtight package. Bake in preheated 450° oven for 20 minutes. Carefully unwrap foil; test for doneness. If necessary, rewrap; bake for 5 minutes or until done. Transfer chicken and apricots with accumulated juices to plate. Sprinkle with parsley.
