Asian Coleslaw with Miso-Ginger Dressing - Mary's

Directions

In heatproof jar, add ginger, garlic a just enough oil to cover. Microwave for 30 seconds.

To the jar, add rice vinegar, miso, peanut butter, lemon juice and oils. Shake vigorously until completely smooth

Combine all salad ingredients in large bowl. Add dressing to taste, probably 1/2 to 2/3 of the jar. Save the rest for another use. Toss thoroughly to coat.

Serve slightly chilled or at room temperature.
