Preheat your oven to 350°F and grease a 12-cup muffin tin or spray with non-stick spray
Combine the wet ingredients (milk, lemon juice, eggs, melted butter, vanilla extract, and lemon zest) in a large bowl and whisk until smooth.
Whisk flour, baking powder and salt very well, Stir into wet ingredients until just combined.
Pour the batter into the prepared muffin cups, filling each about three-quarters full.
Bake for 20 to 25 minutes until the centers are set and a toothpick comes out clean.
Allow the pies to cool in the tin before transferring them to a wire rack to cool completely.
Dust with powdered sugar before serving.
