Melt butter in heavy medium skillet over medium heat. Add spinach, basil, oregano and garlic and cook until softened, stirring occasionally, about 5 minutes. Arrange chicken smooth side down on work surface. Flatten using meat mallet or rolling pin. Place 1 ham slice on each breast half. Top each ham slice with two slices cheese, overlap ping to cover entire breast. Place half of spinach mixture in center of each. Fold breast halves over to enclose layers. Secure with toothpicks. (Can be prepared one day ahead. Cover lightly and refrigerate.) Preheat oven to 375°F. Grease baking sheet. Season bread crumbs with salt and pepper. Dip chicken in egg. Dredge in seasoned breadcrumbs. Place on prepared sheet. Bake until chicken is springy to touch, about 30 minutes. Remove toothpicks. Serve immediately. chick 27
