Directions

Brown meat over high heat in dutch oven until really browned. Do in batches if necessary. Transfer meat to plate. Add broth to pan and dissolve browned bits. Meanwhile, cut meat into 1 to 1-1/2 chunks and pack jars. 6 lbs of meat cubed plus broth fills 7 pint jars. Pour broth in packed jars leaving 1 to 1-1/2 headroom. Process for 75 minutes at 11 lbs of pressure.
