Directions
In a small bowl, mix together the Greek yogurt, mayonnaise, Parmesan, green onion, 1/2 c. of the bacon and a pinch of salt.
Spread 1 heaping tablespoon of the mixture in each endive leaf and top with the remaining bacon and chopped tomatoes. Serve immediately or store refrigerated for up to 3 hours.
