Directions

Place broccoli on paper towels; drain. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add carrot and onion; saute 5 minutes. Remove from heat; stir in broccoli, croutons, and next 4 ingredients. Spoon into a 1-1/2-quart casserole coated with cooking spray; sprinkle with cheese. Bake, uncovered, at 350° for 35 minutes. Yield: 5 servings (serving size: 1 cup).
