CATFISH FILLETS - BREADED HERBED

Directions

Stir together egg and cream in small bowl. Combine dry ingredients and turn out onto paper plate. Dip fillets in egg mixture, dredge in bread crumb mixture. Place fillets in large skillet sprayed with cooking spray. Cook until fish flakes easily with fork. Serve immediately.

Note: I used masa instead of corn meal. Interesting flavor. Try serving with a tomato, onion salsa or bruschetta sort of stuff
