Chicken Satay - Mary's

Directions

Ahead of time, soak skewers in water for couple of hours.

For the marinade: Combine all ingredients. Add the chicken pieces, and toss them to coat them well. Cover the bowl, and chill the chicken for 4 to 8 hours.

For the dipping sauce: combine all ingredients. Set aside.

Remove the chicken pieces, and thread them on thin skewers. Grill or broil them for 10 to 15 minutes or until they are just cooked. Do not overcook them.

Preparation tip: For the sake of logistics, the chicken can be grilled in advance and reheated in the oven or microwave at serving time.
