Directions
Sauce: In a measuring cup, combine sesame oil, garlic, ginger and pepper flakes. Microwave for a minute on 3/4 power. Stir in peanut butter until smooth. Stir in remaining sauce ingredients.
Noodles: Cook soba noodles according to package directions. Drain and set aside. Toss with a little sauce to keep from sticking.
Chicken: Grill thighs. Remove the chicken from heat, let cool slightly, and shred or chop.
Veggies: Meanwhile, chop the veggies finely. Toss everything together and serve at room temp.
