Chicken Tikka Masala Authentic - Mary's

Directions

To make the marinade - Whisk togther marinade ingredients. (Can be made ahead.)

Add chicken fillets to marinade and refrigerate at least one hour.

To make the sauce - saute garlic, ginger jalapeno in olive oil for 1 minute. Stir in coriander, cumin, paprika, garam masala salt.

Stir in tomato sauce or can of diced tomatoes. and simmer 15 minutes. Stir in cream; simmer to thicken- about 5 minutes. Set aside

Meanwhile remove chicken from marinade, shaking off excess. (Discard marinade.) Grill chicken, turning occasionally, to cook through- about 8 minutes.

Chop chicken into 1 cubes and add to sauce. Simmer 5 minutes.

Garnish with fresh cilantnro. Serve with basmati rice, naan or pita bread.
