Heat oven to 325°. Place all ingredients except chocolate and shortening in mixer bowl; beat until dough is smooth, cleans side of bowl, and gathers into ball. Flour fingers and press dough evenly over bottom of (unbuttered) 9-in. square baking pan. Using sharp knife, score dough into 16 squares, then score each square into 2 triangles. Prick each triangle twice with fork. Bake until dough is set and barely colored, about 20 minutes. Let cool 5 minutes in pan, then cut triangles. Cool completely in pan. Heat chocolate and shortening in top of double boiler over hot water until completely smooth. Dip corner of each cookie in warm glaze and let dry on wire rack.
