Directions
These are meant to be served warm so have the water bath in the 400 degree oven, hot and ready. Pop in the ramekins when dinner starts.
Put the chocolate and butter in the top of a double boiler above simmering water. Whisk every now and again until melted
In another bowl, whisk together the eggs, vanilla, sugar, and flour until just blended. Gradually whisk in the melted chocolate mixture. Set aside.
Grease 4 (1-cup) ramekins with butter and add flour (or sugar) to cover the butter, tapping the ramekins to get rid of excess.
Pour the mixture into the ramekins. Put ramekins in the water bath about an hour before you want to eat them and bake for 20 minutes or until the tops are firm and cracking slightly and the edges set. Cool until ramekins are touchable. Serve with a dollop of whipped cream (or ice cream) on top.
