Directions
Heat oven to 400ยบ.
Toss fruit with sugar, cornstarch and lemon juice in 2 quart baking dish. Heating in microwave will reduce cooking time.
For the crust: Whisk together flour, sugar, baking powder and salt in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks crumbly. Beat together egg, milk and vanilla. Stir into flour mixture. Mix just until it comes together. It will look shaggy. Pick up golf ball sized piece and gently form a flat biscuit. Lay on fruit so biscuits just touch each other.
Bake 25 to 30 minutes or until topping is golden brown. Serve warm and, if desired, with sweetened whipped cream or ice cream
