Cocoa-rum Pudding

Directions

Place bread cubes in an large bowl; add vanilla and let stand about 10 minutes. In a small bowl stir together sugar, cocoa powder, and cinnamon. Combine eggs, raisins, butter or margarine, and vanilla; add sugar mixture and mix well. Stir into bread. Pour bread mixture into an ungreased 1Ox6x2-inch baking dish. Bake in a 375° oven for 40 to 45 minutes or till knife inserted near center comes out clean. Serve warm with Sweet Rum Hard Sauce. Makes 6 to 8 servings. Sweet Rum Hard Sauce: In a small mixer bowl beat together 1/2 cup butter or margarine and 1 cup sifted powdered sugar. Add 1 tablespoon rum or 1/2 teaspoon rum extract; beat till fluffy. cover and chill. Makes 3/4 cup. Per serving: 365 cal., 9 g pro., 67 g carb., 9 g fat, 103 mg chol, 2.6 mg sodium. DESS 73
