Directions
Grind graham cracker into crumbs and divide evenly between 4 shot glasses. In a small bowl, stir pudding with coconut extract and lime zest. Spoon evenly between shot glasses. The pudding should almost reach the top. Refrigerate at this point if you arent ready to serve. Once you are ready to serve, top with cream, toasted coconut and a lime wedge. Serve immediately.
