MJF Notes: Made for Kenzis birthday 2021. Made 20 cupcakes. Wonderful!. Made again for Janes birthday. Used #20 disher which made 24 cupcakes but not full enough. Next time try the #16 disher. Made 2/21/22 test batch for Coles birthday. Great flavor and texture but some overflowed, were flat and some sunk. Alton browns came out great
Heat oven to 350°F.
Grease and flour two 9 inch round baking pans or one 13x9 inch pan.
In large mixer bowl, stir together dry ingredients.
Whisk eggs, milk and oil in small bowl. Add to dry ingredients. Beat on medium speed for 2 minutes.
Stir in boiling water by hand (batter will be thin).
Pour into prepared pans or cupcake tins. Bake 30 to 35 minutes for round 9-inch pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. (Do not use 8-inch pans or the batter will overflow.).
For cupcakes, use #16 disher which makes about 20 cupcakes. Because they have a tendency to overflow, dont fill more than 2/3 full. Bake about 18-20 minutes.
Cool 10 minutes; remove from pan to wire racks.
Buttercream Frosting: 2 cups confectioners sugar, about 9 oz by weight...or more if desired 1/2 cup butter, softened 1 teaspoon vanilla extract 2 tablespoons milk, or cream
