To cook a citrus sauce: In a small saucepan stir together 1/4 cup sugar and 1 tablespoon cornstarch. Stir in 1/2 teaspoon finely shredded orange or lemon peel. Add 1 cup orange juice or 3/4 cup water and 2 tablespoons lemon juice. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Add 1 tablespoon margarine or butter; stir till melted. Cool about 30 minutes. Fix and chill the sauces up to a week ahead. Choose plain or white plates to show off your designs. Squeeze the sauce directly onto the plate. Or, use a stirred custard sauce as a canvas for your fruit sauce designs. Pour the fruit sauce into a squeeze bottle, such as a honey dispenser. Or, you can use a heavy-plastic self-locking bag and just snip off a small piece of the corner. Experiment with your design and the consistency of your sauce by squeezing samples onto a piece of waxed paper. If too thin, add a little powdered sugar. If too thick, stir in some water or juice. When youre happy with it, repeat the pattern on your plates. Holding your hands steady over each plate, squeeze the fruit sauce gently and continuously to make these patterns: For plain stripes or lines, move your hands over the plate, applying steady pressure to the bottle or bag. Make straight or curved lines, zigzags, spirals, triangles, or circles. For dots, hold your hands over one spot, squeeze gently, then release the pressure and lift the bottle up and away. For hearts, squeeze drops of fruit sauce onto a plate or a pool of another sauce. Draw a knife through the centers. To marble, spoon small drops of sauce onto a pool of another sauce. Draw a knife through in a swirling motion. For chevron stripes, squeeze the sauce in parallel lines onto a pool of another sauce. Draw a knife through the fruit sauce across the parallel lines at a right angle. Start from one direction for the first stroke, then bring the knife from the other direction for the second. Continue alternating, bringing the knife from the opposite direction for each stroke. To blend a fruit sauce: In a blender container or food processor bowl, combine raspberries or peeled kiwi fruit with a little sugar. Cover, blend or process just till smooth.
