How To Make Lazy Enchiladas, Step-By-Step
Preheat the oven to 400 degrees. F.
Apply non-stick cooking spray to the baking dish and place the taquitos down side-by-side in the pan. Ana also suggests spraying the tops of the taquitos lightly with non-stick cooking spray.
Cook the taquitos in the oven for 10-12 minutes.
Begin chopping the fresh ingredients and preparing the Spanish Rice. These are optional toppings and sides, but they complement the lazy enchiladas deliciously.
After the taquitos have baked, pour two cups of enchilada sauce over the taquitos.
Next, sprinkle the Mexican blend cheese on top. Use at least 8 ounces. In my opinion, it could use more cheese, like approximately 12 ounces. Ana says, Everything tastes better with lots of cheese.
