Fresh Apple Fruitcake

Preheat oven to moderate (350°). Grease bottom only of 10x4-inch tube pan. Line bottom with wax paper; grease paper. Sift together flour, baking soda, salt, cinnamon and mace into small bowl. Beat together sugar, eggs and vanilla in large bowl until blended. Add oil; beat until smooth. Stir in flour mixture. Fold in apples, nuts and dotes. Spoon batter into prepared pan. Bake in preheated moderate oven (350°) for 1-1/2 to 1-3/4 hours until wooden pick inserted into center of cake comes out clean. Cool cake in pan on wire rack. Run thin, sharp knife around outer edge and inner tube of pan to remove cake. Invert onto rack. Invert cake again onto serving plate. Dust top with 10X sugar and garnish with alternating slices of red and green apple, if you wish.
