Fried Goat Cheese Marinara

Directions

Place egg in shallow dish. Place breadcrumbs in another shallow dish. Dip each goat cheese round in egg, then in breadcrumbs, covering completely. Place on plate, cover and refrigerate 30 minutes or up to 3 hours. Heat oil in heavy large skillet over high heat. Add cheese in batches (do not crowd) and cook until crisp and golden, about 1-1/2 minutes per side. Drain on paper towels. (Can be prepared 3 hours ahead. Transfer to oven-proof plate, cover and store at room temperature. Rewarm goat cheese rounds in 350 °F oven 5 minutes.) Spread warm Marinara Sauce on each plate. Top each with 2 goat cheese rounds.
