Directions
Thickness of sauces will vary according to texture of fruit. Berry sauces can be spooned over foods. Thinner sauces look best if spooned around or topped by dessert they will accompany. Many sauces thicken considerably on standing. If making sauce ahead, whisk until smooth before serving, thinning with lemon juice, liqueur or water. If adding liqueur or brandy to sauce, whisk in just before serving.
