Garlic-crumbed Drumettes or Drumsticks

Directions

Combine lemon juice, garlic, red pepper sauce, yogurt, salt and cayenne in plastic bag or covered plastic bowl large enough to hold chicken. Marinate for at least 3 hours. (If mixture is too dry, add a little Italian or similar salad dressing.) Heat oven to 375°. Combine cracker crumbs, oregano, mustard, and paprika in large shallow dish. Roll marinated chicken in crumbs to coat well. Place on baking sheet lined with aluminum foil coated with olive. Spray chicken with aerosol olive oil spray. Bake in center of oven, turning if necessary, until tender and golden brown, about 40 minutes for drumettes, longer for drumsticks. Serve hot or at room temperature. Serves 6.
