Combine Vinegar Herb Mixture. Set aside.
Combine vegetables in non-reactive bowl. Add Vinegar mixture. Cover and refrigerate a couple of hours or overnight. Stir occasionally because the vinegar wont cover.
Add the olive oil, mix well. Pack into jars. Giardiniera will only get better with time. Will last in fridge for at least 2 to 3 weeks.
