Preheat oven to 375°F. Toss cheese with oil and thyme in small bowl. Spread in pie crust. Mix all remaining ingredients in medium bowl to blend. Pour over cheese. Place tart on baking sheet and bake until filling is puffed and brown, covering edges with foil if browning too quickly, about 35 minutes. Cut into wedges and serve hot. Makes 2 to 4 servings.
