Directions
Whisk together oil, vinegar, garlic, and salt and pepper to taste in small bowl; set aside. Place onions in serving bowl and toss gently to separate layers. Toss onions with tomatoes, arugula, and dressing; add more salt and pepper to taste. Serve immediately.
