Grilled Sea Bass With Parsley and Lime

Directions

Fresh basil sprigs Set one 2-foot sheet of heavy-duty aluminum foil on work surface. Top with two overlapping 2-foot sheets of foil, Spread center generously with butter. Top with 6 pieces fish. Season with salt and pepper. Squeeze lime juice from 1 lime over fish. Top each piece with lime round, then piece of butter. Sprinkle with half of parsley. Bring sides of foil up and over; seal to form packet. Repeat entire process. Prepare barbecue (high heat) or preheat broiler. Grill fish packets 10 minutes; do not overcook. Open packets carefully. Transfer fish to platter. Discard cooked lime rounds. Replace with fresh lime rounds. Spoon cooking juices over. Garnish with basil. fish 12
