Harvest Bowl

Directions

Add quinoa, olive oil, and chicken broth to rice cooker. Set on Quick Cook. When finished, open lid.

Preheat oven to 400. Cut sweet potatoes into cubes about 3/4. Add to a bowl with the all of the seasonings and toss well to coat. Add oil and toss well again. Transfer to a baking sheet and roast 15-20 minutes. Check after 15. Set aside.

Dice the apples, put in salad bowl and toss in lemon juice. Chop kale/spinach and add to bowl.

Chop the nuts and add to the bowl. Add quinoa and sweet potatoes last.

Dress, toss and serve. Serve goat cheese and chicken on the side
