Homemade Mayonnaise - Nancy Birtwhistle

Directions

Combine egg, whey, vinegar, mustard, salt and garlic in food processor bowl. Blend until bright yellow, about 15-20 seconds.

Slowly add olive oil in a thin stream while continuing to blend, allowing the mixture to emulsify and thicken.

Variation: To make aioli, add 1 minced garlic clove to the egg mixture
