Add all the ingredients EXCEPT vanilla into a saucepan and simmer for about 10 minutes, or until all the ingredients are blended and the honey is dissolved, whisking as much as you can stand. Stop simmering when bubbles form along the edges. Take the temperature. Should be about 175. Whisk in the vanilla.
Strain out any gunk from the mixture. Cool down to lukewarm, and then chill in the freezer for about 1 hour.
If you're more patient with the freezer cooling, now add to ice cream maker and follow the ice cream maker's directions from this point.
