Preparation: Place nonstick skillet over medium heat. Whisk flour, baking powder, baking soda and salt together in a bowl. Add sugar, eggs, buttermilk and melted butter, whisk to combine all ingredients until just combined. Leave lumps! Do not over stir. To test if the pan is hot enough, sprinkle some water on it, if the water bounces, the pan is hot enough. Coat with nonstick spray (optional). Pour about 1/4 cup of batter onto the hot pan. Sprinkle banana pieces onto the top of each pancake on the griddle. Lightly tap to ensure each piece submerges in the batter. Pancakes should be flipped when tiny bubbles start to form on top of each cake.
