Directions
Into a food processor with the motor running drop the garlic and mince it fine. Add the chick-peas and puree the mixture. Transfer the puree to a bowl, stir in the lemon juice, the parsley, the oil, and salt to taste, and transfer the hummus to a platter. Arrange the onion and tomatoes around the hummus and serve the hummus with the bread or the pita triangles. Makes about 1-1/2 cups
