Ice Cream - No cook base with Eggs - Mary's

Directions

Soaking fruit in vodka ahead of time will keep them from freezing into rocks.

Beat eggs, sugar and Avacream in mini cuisinart mixing bowl until light and fluffy, 1 to 2 minutes. Then continue whisking until completely blended, about 1 minute more. Add 1/3 of the fruit and blend.

Pour in the cream and vanilla and whisk to blend.

Pour into ice cream maker and freeze following the manufacturers instructions.

After the ice cream stiffens (about 2 minutes before it is done), add fruit, then continue freezing until the ice cream is ready.
