Directions
Preheat oven to 350 degrees. Get out an 8 tart pan
Combine the crumbs with the melted butter. When the butter is blended evenly press the mixture into a pie pan, making sure the crust is even from the bottom to the rim of the pie pan. Bake the crust for 10 minutes.
Filling : Meanwhile beat together all ingredients until smooth. Pour into the crust and bake for 10 minutes at 350 degrees. Cool for 30 minutes, then chill until cold.
Topping : Whip cream. Part way through add sugar and vanilla. Pipe around rim of pie
Note: The original recipe calling for 1-1/4 cups crumbs was too little for 9 crust
Made this 8/19/20 for Johns birthday picnic. Used 6 8oz wide-mouth ball jars set in a baking pan with a little water in the bottom to avoid heat thermal shock. Baked the crumbs for 20 minutes at 220 F. Added filling and baked another 20 minutes. They were great. Crust was a bit tough. Maybe less baking time.
Made for Johnny dinner 4/6/23: Good amount for crust for 9 tart pan. Filling could have been more. How to increase? Would have been fine for an 8 pan. Just rememembered I whisked rather than beat filling. That may have been the reason.
