Lemon financier

Directions

In a bowl combine the 00 type flour with the almond flour and the icing sugar.

Add the egg whites at room temperature and mix with a spoon to absorb them from the powders, to obtain a homogeneous mixture.

Bring a small pan with the diced butter over the heat and grate the lemon zest (2). Melt it on a low flame but taking care not to burn it. Let the butter cool down for a few moments, then add it to the rest of the ingredients.

Preheat the oven to 240 degrees C. Lightly grease and flour the molds for the Financieres and pour the dough evenly, trying to level it (3). Place the molds in the oven and bake for about 5 minutes. Lower the oven temperature to 175 degrees C and cook the biscuits for another ten minutes, or until they are swollen and slightly golden on the surface. Remove the biscuits from the oven when they become slightly golden and let them cool completely. Remove the Financieres from the molds and decorate with a sprinkling of icing sugar. Preservation

Lemon financieres can be preserved for two or three days at room temperature, in a cool and dry place. Close them in an airtight container, or simply store them under a glass bell jar.
