DRESSING: 2 cups ricotta cheese or soft tofu 1/2 cup nonfat milk 2 Tablespoons lemon juice 3 Tablespoons Dijon mustard 3 Tablespoons cider vinegar 2 Tablespoons Parsley Patch All-Purpose Blend seasoning Combine first 8 ingredients in large bowl. Place remaining ingredients in blender or food processor, and blend until smooth. Pour over vegetables, and toss until well combined. Chill. Serves 10. salad 5
