YOGURT-CITRUS DRESSING: 1-1/2 cups plain yogurt 1/4 cup undiluted frozen orange juice concentrate, thawed 1 Tablespoon fresh lemon juice 2 teaspoons grated orange rind 1 Tablespoon minced fresh mint 1 Tablespoon unfiltered honey 1 teaspoon sea salt (optional) dash cayenne, or more to taste SALAD: 2 heads butter lettuce 1 cup unsalted raw cashew pieces, coarsely chopped pecans, or sliced almonds 3 oranges, thinly sliced, and each slice cut in half Toss salad ingredients in large bowl until thoroughly combined. Blend dressing ingredients in blender 1 to 2 minutes until very smooth. Pour over salad, and mix thoroughly. Serves 6. salad 6
