Mai Tai Cupcakes - Marys

MJF Notes: Maybe a Myers Rum floater brushed on top before icing? Made these for Laurens picnic 10/20/19. They were awesome. but cherries sank during cooking. Try tossing them in flour before adding to batter.

Preheat oven to 350 degrees. Line muffin tins with white cupcake liners.

Prepare cupcake batter according to its directions (add the yellow food coloring with the liquids). Divide equally between 2 bowls.

In one bowl mix in the chopped cherries, red food coloring and cherry extract. Set aside. In the other bowl mix in the pineapple.

Using a #40 disher (about 1-1/2 tablespoons), scoop the pineapple batter into each cupcake liners. Repeat with the cherry batter.

Bake 15 minutes or until a toothpick inserted into the center comes out clean. Cool completely on wire racks.

For adult version, add rum in place of some milk in batter. And/or dip dome in Myers Rum. Let soak in before frosting.

FROSTING: Whip the butter until fluffy, add extracts, whip until well combined.

Add sugar 1 cup at a time, make sure to add water as needed, dont wait until the end.

For a fluffy marshmallow like frosting whip an additional 2 minutes.
