Spray a large baking sheet with non-stick spray coating or use parchment; set aside. In small bowl, stir together flour, baking powder, baking soda aniseed lemon peel and salt; set aside. Place margarine in a medium mixer bowl. Beat with an electric mixer on medium speed till softened. Add sugar; beat till fluffy. Add eggs one at a time beating well after each and anise flavoring if using. Stir in flour mixture, then nuts and fruit. Turn mixture out onto floured surface and gently knead to bind. Shape dough into three 12-inch-long logs. Place on prepared baking sheet. Bake in a 350° oven for 25 to 30 minutes or till lightly browned. Immediate and carefully transfer logs to cutting board and slice each log into 3/4-inch slices slightly diagonally. Carefully return slices, standing up, on the baking sheet. Bake in a 200° oven with door ajar for 25 to 30 minutes or until crisp and dry. Check occasionally. Cool completely before placing in air-tight container. Makes about 60.
