Toss bread cubes with melted butter. Bake in 350? oven until toasted, tossing occasionally, about 10 to 15 minutes. Remove to a large bowl and toss in raisins. Mix sugar, milk, eggs, vanilla, nutmeg and cinnamon in separate bowl. Pour over bread cubes and mix well. Let stand about 10 minutes. Turn into 13x9-inch baking pan. Push down cubes that might stick up until mostly submerged. Dot the top sparingly with butter (or use spray butter). Sprinkle top with a little sugar and cinnamon. Cover with foil. Bake at 350? 20 minutes. Remove foil and back another 25 to 35 minutes or until pudding is set and top in lightly browned. Serve warm with low fat whipped topping or ice cream. Makes 6 servings. Optional: Add two chopped apples which have been sauted quickly over medium-high heat in a little butter. [Next time try baking in bain marie.]
