Mix minced garlic and olive oil in microwave bowl or small pan. Heat gently for a minute or two to release garlic flavor and aroma. Remove from heat and let sit for 10 minutes, then pour into large bowl. Whisk in next 6 ingredients. Add lettuce, as many croutons as desired, cheese and generous amount of pepper. Toss well, divide among salad plates. Grate additional Parmesan on each and lay an anchovy fillet across the tops and serve.
