Melt butter with olive oil in large skillet over medium heat. Add garlic and saute about 1 minute. Add bread cubes, stirring well to coat with butter mixture. Sprinkle with herbs and salt. Saute until just beginning to brown, tossing occasionally. Spread bread cubes in even layer on cookie sheet covered with foil ungreased. Bake at 325? about 25 minutes or until lightly browned and crisp. Cool, then place in freezer storage bag and freeze until needed. Makes about 2 cups. PARMESAN CROUTONS After sauteing, cool slightly and place in plastic bag with 1/4 cup freshly grated Parmesan cheese. Toss until evenly coated. If you like you can hold all dry ingredients until this step and toss all together. Spread in even layer on cookie sheet covered with foil ungreased. Bake at 325? about 20 minutes or until lightly browned and crisp. Watch them because the Parmesan variety may brown faster. Cool, then place in freezer storage bag and freeze until needed.
