Orange-Ginger Chicken Lo Mein - Mary's

Directions

Grill chicken to a slightly underdone stage (will finish cooking later). Shred or slice when cooled.

Combine next 9 ingredients in a small bowl; stir well with a whisk. Set aside.

Cook noodles, drain and set aside.

Heat oil in a large nonstick skillet or wok over medium-high heat. Add vegetables; stir-fry 2 minutes. Add green onions; stir-fry 3 minutes or until chicken is done. Add broth mixture; cook 1 minute or until thick, stirring constantly. Add chicken until warmed through.

Add noodles and toss well. Sprinkle with peanuts.
