Directions
Preheat the oven to 425 . Spray or wipe a heavy 10-inch skillet with vegetable oil and place the skillet in the oven. In a large bowl whisk the eggs, egg whites, milk, and vanilla. Add the flour and salt, and stir to combine. Remove the skillet from the oven. Pour the batter into the skillet and return it to the oven. Bake for 15 to 20 minutes, until it is puffed and the edges are browned and crisp. Remove from the oven, sprinkle with lemon juice, and sift over confectioners sugar to taste.
