This was pretty darn good. A little dry but can add a bit of water at end if necessary. John prefers sweeter so the black soy sauce above was increased from 1 Tblsp to 3
Marinade: Mix black soy sauce, oil, and cornstarch. Add steak and mix till coated. Set aside.
Sauce: Combine oyster sauce, sugar, soy, Thai black soy, fish sauce, and pepper in a small bowl.
Noodles: Follow the directions on package and undercook the noodles slightly, since you will be cooking them again. After draining, toss with a tablespoon of oil to prevent sticking to the wok.
Assembly: Heat wok over high heat until it just starts to smoke, and spread 1 tablespoon of oil around the perimeter of the wok evenly to coat. Sear the beef until it is 80% cooked through, and transfer back to the marinade bowl.
Add another tablespoon of oil to the wok and add broccoli. Stir-fry for a minute. stir in the garlic and toss so it doesnt burn. Remove to dish with beef.
Next, spread noodles around wok. Working quickly over high heat spread sauce on noodles, gently mix with scooping motion for 20 seconds. Add the beef and broccoli back to wok.
Continue cooking, stirring less frequently (so the noodles get slightly caramelized, for another 1 to 2 minutes, or until the noodles are heated through. Serve hot with Chili Oil on the side!
