Trim fat from pork, slice into bite-sized pieces. Combine baking sode and water in bowl. Add pork, mix and let sit for 20 mins. Then rinse and let dry.
Meanwhile make sauce: Put garlic, ginger, oil in 2-cup measuring cup. Micro on high for 40 seconds. Add remaining sauce ingredients and set aside.
Heat 1 tablespoon oil in a large skillet over medium high heat. Add rinsed/dried pork, cook 3 minutes or until browned. Remove from pan and keep warm.
Heat remaining tablespoon oil in pan. Add bok choy, celery, red pepper, mushrooms, water chestnuts and stir fry for 3 minutes. Combine pork and broth mixture in skillet, cook 1 minute or until thick.
