Pork Sate With Peanut Sauce

Directions

Trim fat from pork; set aside. Combine juice and next 4 ingredients in a zip-top heavy-duty plastic bag. Add pork; seal bag, and marinate in refrigerator 2 hours. Position knife blade in food processor bowl; add onion and next 5 ingredients. Process until smooth, scraping sides of bowl once; pour into a 2-cup glass measure. Cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 3 minutes, stirring with a wire whisk after 2 minutes. Set aside; keep warm. Remove pork from bag, reserving marinade. Coat grill rack with cooking spray, and place on grill over medium-hot coals. Place pork on rack, and cook 10 minutes on each side or until meat thermometer registers 160°, basting occasionally with reserved marinade. Cut pork into 1/4-inch thick slices; serve with peanut sauce. Yield: 6 servings (serving size: 3 ozs. pork and 1/4 cup sauce).
