Directions
Mix both flours and salt in large bowl. Add water and mix until dough comes together. Add butter and mix until evenly distributed. Gather dough into ball. Roll out on lightly floured surface to 8x 12-inch rectangle. Brush off excess flour. Fold in thirds as for business letter (this is a single turn). Rotate dough 180?. Roll into 8x12-inch rectangle. Fold both short ends in to meet in center, then fold in half at center (this is a double turn). Turn dough 180. Make a second double turn. Turn 180? and make a third double turn. Cover and refrigerate overnight. (Can be refrigerated 3 days or frozen 1 month.) dess 8
