Roast potatoes from Prue Leith

Method

Boil your potatoes until theyre marginally cooked on the outside. Place a lid back on the saucepan and give it a good shake.

Then take a handful of breadcrumbs and place them into the saucepan as well.

Next, pour some melted butter over the potatoes and breadcrumbs, making sure theyre all greasy.

Place the potatoes and breadcrumbs on a baking tray and into the oven until brown and crisp.
